Bombe Surprise’, a French expression, is a decadent, luxuriously self-indulgent desert which first put in an appearance in the 1880s. Quite simply, ice cream is frozen in a spherical mold so that it resembles a cannon ball, hence the name, then tarted up a bit.

And the ‘surprise’ element becomes apparent when the bombe is sliced open revealing unexpected layers, tastes and textures hidden within its frozen shell.
